1) Add all ingredients to shaker tin (except seltzer)
2) Dry shake (aka no ice)
3) Pour over small square cubes in collins glass
4) Top with Seltzer
5) Garnish with salt rim, crushed pink peppercorn or dried rose petal

*Now’s the time to utilize your Aqua Faba, aka bean water! The leftover juice from a can of chickpeas is commonly used in bars and kitchens as a replacement for egg whites. It gets super frothy, has a more neutral flavor, adds body, and a silky mouth-feel to your cocktail. Chickpea juice is the classic go-to but other white bean varieties work as well. Just strain the liquid from the beans and you're ready to go.
